This recipe is my take on a classic Chinese take-out dish, minus the MSG, high sodium count, and price tag. You can tailor it to your family’s exact specifications, and use a wealth of vegetables as you desire. This diabetic dinner recipe can be made in small quantities in about 15 minutes, or with a little more effort and time, in large quantities in a wok. This is one of my favorite go-to diabetic meals because it’s quick, easy, delicious, and you never have to have it the same way twice!
